8 C. potatoes (cooked, riced, packed)
1/2 C. butter
1 C. cream
4 t. salt
4 t. sugar
2 C. flour

Directions:
Directions:
Add butter, cream, salt, and sugar to warm potatoes and mix by hand. Chill overnight. Add four to one batch at a time - Just before ready to roll. Make 1/3 C. balls and keep in fridge until needed. Grill at 500. Change controller between batches. Cool on alternating three stacks covered with a dish towel.

Used 10 lbs. white and 5 lbs. red potatoes to make 3 - 8 C. batches which made approximately 90 rounds.
