lb. unsalted butter, softened (1 stick)
c. powdered sugar
1 c. all-purpose flour
~ mix on medium until crumbly. Transfer to ungreased 9x9 or 8x8 pan. Press int ot place with fingers. Bake at 325 for 20 mins.

2 eggs
1 c. sugar
2 tbsp. flour
2 tsp. lemon zest
2 tbsp. lemon juice
tsp. baking powder
~ Beat eggs with whisk, add remaining ingredients. Whisk until smooth.

Remove crust. Turn oven up to 350.
Pour lemon mixture over crust and back for 25 mins. (8x8); Or, 20 mins. (9x9)
Sprinkle with powdered sugar for garnish while still hot.
