      Ingredients:  1/2 pound (8 oz) pasta such as bowtie, penne, ziti, farfalle, fusilli, rotini, elbows, or campanelle
  1/2 cup frozen corn 1/2 large sweet onion, diced 1/2 jalapeno, diced 1 cup zucchini, chopped into bite-size pieces 1 clove garlic, minced 1/2 cup green olives, chopped 2-3 Tbsp chives 1 tomato, diced (about 1 1/2 cups) 1/4 cup Parmesan cheese 1/3 cup olive oil Generous pinch of salt

		Directions:		 | 
      Directions:Start cooking pasta in salted water to desired doneness. About 10 minutes. 
  While pasta is cooking, combine the corn, onion, jalapeno, zucchini, garlic, green olives, chives, and tomato into a large microwave safe bowl. Add the Parmesan cheese and drizzle the olive oil over the mixture. Stir to lightly coat. 
  Cook vegetable mixture on high in the microwave for 5 minutes. 
  Drain the cooked pasta and add it to the vegetable mixture. Stir to combine. 
  Serve in individual bowls and top with more Parmesan cheese, chives, olive oil, and salt and pepper to taste.   |

                Notes: I eat this at least once a week and play with the ingredients all the time. I don't like jalapenos so don't add those but I have added Kalamata olives and subbed out the zucchini with cucumber. I have also made cubed and shredded chicken and added that in at the end to give it a protein. This is quick, very tasty, and easy to make.
