1 lg. eggplant, peeled and chopped
½ c. onion, chopped
¾ c. milk
1 egg, slightly beaten
2 slices bread, torn in small pieces
½ tsp. salt
¼ tsp. pepper
1 c. shredded cheese

Directions:
Directions:
Place eggplant and onion in pot, cover with water and bring to boil. Drain water and mash eggplant. Add all ingredients except cheese. Place in greased 8" x 8" casserole dish. Top with cheese and bank at 350º for 30 minutes.
