4 c milk
1/2 c sugar
6 mac daddy sized egg yolks
1.2 c flour
2 tsp vanilla


This requires tempering
Read the whole thing before you start

Mix your egg yolks with about 1 cup of the milk. Add the vanilla, set aside

In a heavy saucepan, bring the rest of the milk just to a simmer
Don't blink - it will scorch ( yuck )

Take off the heat. Remove about 1/2 cup of this and stir the flour into it. Stir till smooth, then gradually add it back into the rest of the milk

Ladle a little of the warm milk to the eggs, and mix in, do this 2 or 3 times, to gently warm up the eggs, then stir the egg mix back into the milk

Return to heat over low, and cook till thick enough to coat the spoon
Pour into a bowl, cover and refrigerage
