Sour Cherry Streusel Pie Recipe

1 pie crust. Homemade or store bought

Streusel
1-1/4 c flour
6 tbsp packed, golden brown sugar
1/4 c white sugar
3/4 tsp cinnamon
1/4 tsp salt
1/2 c butter, melted
1/4 tsp vanilla

Filling:
1 c sugar
3-1/2 tbsp flour
1 tsp cinnamon
pinch of salt
2-1/2 lbs sour cherries, pitted

Directions:
Directions:
Roll out the pie crust on a floured surface. Transfer to a 9" pie plate. Fold edges under. Crimp, forming high rim above side of pie plate.

For streusel:
Mix first 5 ingredients in a bowl. Add melted butter and vanilla; rub in with fingertips. Set aside

For filling:
Position the rack in center of oven, preheat to 375º Place a foil lined baking sheet on the shelf in the oven under the shelf you will cook the pie on.
Mix the first 4 ingredients in a large bowl. Add cherries, toss to coat. Let stand until cherries are juicy stirring occasionally, about 10 minutes. Put filling in the chilled crust, mounding i the center. Cover the filling with the streusel pressing it to the edges of the pie.
Bake the pie for 20 minutes and then cover with foil and bake for 70 minutes more.
