3 C all-purpose flour
2 tsp baking powder
baking soda
2 C sugar
1 C oil
4 eggs
1 (15oz) can pumpkin puree
~1 Tbsp + 1tsp homemade pumpkin pie spice

Preheat oven to 350F .
In a large bowl, combine flour, baking powder, baking soda, spices.
In the bowl of a stand mixer, combine sugar and oil.
Add eggs, one at a time, until well combined.
Add pumpkin.
Add in flour mixture until combined.

Works well as cupcakes or round cakes.
Frost with spiced cream cheese frosting.

1 tsp ginger
tsp nutmeg
tsp allspice
Several dashes cardomom
tsp cloves
