2 tablespoons olive oil
4 oz. Chorizo, thinly sliced
1 lb. gold potatoes, thinly sliced
2 leeks, diced
1/4 teaspoon saffron
1/2 cup white wine
1 lbs. cod
Fresh parsley

Directions:
Directions:
Heat oven to 400. Heat 1 tablespoon olive oil in cast iron skillet over medium high heat. Add the chorizo and cook 2 to 3 minutes. Add the potatoes and cook, stirring occasionally, for 10 minutes. Add the leeks, saffron, 1/2 cup white wine and salt to pepper to taste. Bring to a boil.

Season cod with salt and pepper. Place it on top of the potatoes and drizzle with olive oil. Place the skillet in the oven and bake until cod Id opaque throughout, 15 to 20 minutes. Sprinkle with parsley. Enjoy!
