1 cup flour
1 cup sugar
1½ tsp baking powder
¼ tsp salt
¼ cup vegetable oil
¼ cup water
3 eggs separated
½ tsp vanilla
½ tsp cream of tartar
2 cups heavy whipping cream
½ cup powdered sugar
1 tsp clear vanilla
1 jar lemon curd
2 T fine lemon zest
Directions:
Directions:
Beat together oil, water, egg yolks & ½ tsp vanilla.
Add to flour mixture
Whip egg whites in large clean glass bowl till foamy
Add tartar & whip to stiff peaks
Fold ⅓ of egg whites into flour mixture to lighten
Add rest & blend until no streaks

Evenly spread in 4 parchment-lined loaf pans
Bake 325º 28-32 minutes

Frosting: whip cream, sugar,1 tsp vanilla till stiff peaks

Remove parchment. Cut horizontally into 3 layers, spreading 1½T curd on each layer
Frost. Sprinkle with zest. Refrigerate till ready to serve.
