1 tbsp. sugar
¼ tsp. salt
1 c. milk
1 c. flour, sifted
1 tsp. lemon extract

Crisco vegetable shortening

Combine eggs, sugar and salt. Beat well. Stir in milk, flour and lemon extract beat till smooth.

Heat Crisco to 375º

Before dipping iron in batter, immerse in hot oil so batter won't stick to iron.

Dip iron in batter and cook for approximately 2 mins. or until golden brown. Drain on brown paper. sprinkle with powdered sugar.
