1 ½ lbs brussel sprouts trimmed and cup in half
4 oz pancetta ¼ in diced
¼ c good (green) olive oil
1 ½ teas kosher salt
½ teas ground black pepper
1 T syrupy balsamic vinegar

Directions:
Directions:
Preheat oven to 400º. Place brussel sprouts on a sheet pan including some of the loose leaves (which get crispy). Add the pancetta, olive oil, salt, pepper - toss with hands and spread in a single layer, roast for 20-30 min until tender and nicely browned. Turn once while cooking. Drizzle immediately with the balsamic vinegar and toss. Serve hot.
