Ingredients:
Ingredients:
1 1/2 C sugar
1/2 C oil
2 tsp vanilla

3/4 C cocoa

3 eggs

1 1/4 C flour
2 tsp baking powder

Powdered sugar for rolling dough

Directions:
Directions:
Preheat oven to 375º

In mixing bowl, cream sugar, vanilla and oil

Add cocoa

Add eggs one at a time, mixing in between each addition

In separate small bowl, whisk flour and baking powder and add to batter.
Do not over-mix, dough will be very soft

Chill dough for an hour if you have time - I usually skip this step

*Scoop chilled cookie dough with small scoop, carefully roll in powered sugar and place one on cookie sheet for a test cookie. Bake 8 min.

Add more flour if tester goes too flat.

Remove and cool on racks

Personal Notes:
Personal Notes:
Do not over-bake cookies unless you like them dry and crunchy. (Kerry)
*These cookies should taste like a brownie.
**Remember not to breath in the powdered sugar when you take a bite.
Rookie mistake.
