Ingredients:  
1 Tbsp olive oil
1 cup corn kernels
1 cup plum tomatoes, diced
1 avocado, diced
1/2 cup red onion, diced
2 Tbsp cilantro, diced

Directions:
Directions:
1. Saute corn in olive oil for 3-5 min
2. Remove from heat & let cool completely
3. Combine corn with remaining ingredients-cover & chill
