8-10 tomatoes, halved (I used a dozen or so because some of mine were pretty small)
2 medium onions, quartered
4 cloves garlic
2-3 Tbsp olive oil
sliced fresh basil, to taste
salt and pepper, to taste

Directions:
Directions:
Place everything into a large bowl and add the oil.

Season well with salt and pepper, and stir well to coat.

Pour the oiled and seasoned vegetables onto a baking tray, and roast at 180degC degrees for about 30 minutes.

Place the veggies into your blender, along with the sliced basil.

And it is ready to be served, if you want to let it to sit, then it just needs reheating before serving.
