1 cup warm water
1/2 c honey or agave
2 pkg dry yeast
2 tsp sugar dissolved in 1/2 cup of warm water for the sponge
1 tbsp salt
1/3 c vegetable oil
2 eggs
5 additional egg yolks ( save the whites for quiche, or meringue, etc )
6 c flour (varies depending on humidity so have a little extra )

Make a sponge ( yeast, sugar, water.OK to add a little flour too, to feed the yeasties )

Use a stand mixer with a paddle attachment first. Switch to a dough hook when you've added about half the flour

In your stand mixer combine the rest of the warm water, the honey, the oil and the eggs. Mix on low until well combined. Add in the yeast sponge, then add about half the flour, little at a time.

Switch to your dough hook
Add the salt now so it doesn't hurt the yeast

Add the rest of the flour, then turn on medium high until the dough is combined
If you need more flour, add it now, then let the mixer run to knead the dough for several minutes

Remove the dough oil your mixer bowl
Knead by hand, form a nice ball and put back in the oiled bowl. Cover with plastic, and let it rise about 90 minutes

Punch it down and repeat, and start your oven to preheat to 375

After the second rise, either pan it or divide into 3 pieces, roll into " logs " and braid it

Bake on middle rack for about 40 minutes, check to see if the bread sounds hollow when you tap on the bottom. You'll have to invert the pan to check the loaf, or flip over the braid, etc
