Let rest out of fridge for about 15 min before cooking
Pat dry and season with salt and pepper
Heat olive oil in pan over medium high heat (adjust as needed)
Pan sear salmon for about 4 mins per side. There will be a light brown crust when its ready to flip. (I always start skin side up)

Mashed CAULIFLOWER: (My 4 year old TOTALLY thinks these are potatoes)
1 head Cauliflower
3 garlic cloves
tsp pepper
tsp salt
2 tbsp butter
2 tbsp cream cheese
cup shredded parmesan cheese

Bring large pot of salted water to a boil. Add cauliflower (cut into florets) and boil for 6-8 min. Drain and then use a dish towel to squeeze out a little more liquid.
While the cauliflower is boiling, melt the butter in a small sauce pan. Add the garlic and cook for 2-4 minutes until very tender and fragrant. Remove from heat.
Add the cauliflower, garlic butter, cream cheese, Parmesan cheese, salt and pepper to food processor or blender. Puree until smooth and fluffy!
Taste and add in extra butter, salt or pepper.
