Salmon:
• Let rest out of fridge for about 15 min before cooking
• Pat dry and season with salt and pepper
• Heat olive oil in pan over medium high heat (adjust as needed)
• Pan sear salmon for about 4 mins per side. There will be a light brown crust when its ready to flip. (I always start skin side up)

Mashed CAULIFLOWER: (My 4 year old TOTALLY thinks these are potatoes)
Ingredients
• 1 head Cauliflower
• 3 garlic cloves
• ¼ tsp pepper
• ½ tsp salt
• 2 tbsp butter
• 2 tbsp cream cheese
• ¼ cup shredded parmesan cheese

Directions:
Directions:
• Bring large pot of salted water to a boil. Add cauliflower (cut into florets) and boil for 6-8 min. Drain and then use a dish towel to squeeze out a little more liquid.
• While the cauliflower is boiling, melt the butter in a small sauce pan. Add the garlic and cook for 2-4 minutes until very tender and fragrant. Remove from heat.
• Add the cauliflower, garlic butter, cream cheese, Parmesan cheese, salt and pepper to food processor or blender. Puree until smooth and fluffy!
• Taste and add in extra butter, salt or pepper.
