Boneless skinless chicken breasts
1 can of Rotel
Bell peppers – I like to use a trio of red, yellow and green but really any color will work.
Yellow onion and garlic
Chili powder
Salt and pepper
Fresh Lime
Honey – (optional) this just balances the acidity of the lime and tomatoes
Tortillas and toppings – toppings are optional but don’t forget the tortillas!

1. Add half of the Rotel, peppers, onions and garlic to a 6 or 7 quart slow cooker.
2. Top with chicken breasts.
3. Mix together seasonings and sprinkle over both sides of chicken.
4. Top with remaining Rotel, bell peppers, onions and garlic.
5. Set the slow cooker and let cook through, then cut or shred the chicken.
6. Toss in honey and lime mixture. Serve warm over tortillas with toppings.
