1 ¾ cup all-purpose flour
2 tsp baking powder
½ tsp salt
1 Tbs sugar
3 beaten egg yolks
1 ½ cups milk
7 Tbs melted shortening or cooking oil
3 stiff-beaten egg whites
pre-cooked (but not too crispy) bacon

Directions:
Directions:
Sift together dry ingredients in a large mixing bowl
Combine egg yolks and mix, stir into dry ingredients
Stir in melted shortening or oil
Carefully fold in beaten egg whites, leaving a few little fluffs. Do not overmix.
Pour into greased pre-heated waffle maker and place long strips of pre-cooked bacon over the top (4 strips per waffle)
Bake in waffle baker until brown

My Dad was famous for his bacon waffles that he would make often on Sunday mornings. It took us a while to find this recipe, but we are pretty sure this is the one he used. He loved making these in a waffle iron that made large and thin waffles (not Belgian). Bacon is optional but they really aren't the same without it. Serve with real maple syrup of course.
