1 lb "nippy" cheese (like sharp cheddar)
⅔ cup olive oil
2 eggs
2 cups cooked white rice
1 onion, chopped finely
1 can evaporated milk
Cheyanne
garlic
salt
parsley (a handful)

Directions:
Directions:
Preheat oven to 325ºF
Beat eggs with evaporated milk and mix remaining ingredients together
Place in a buttered casserole dish
Bake 40 minutes

This recipe is a Thanksgiving and Christmas classic in the Atkin Family. My Dad would make it every year and got the recipe from Grandma Edmunds. It is simple, cheesy, hearty, and delicious! We still make it every year. I personally like it because its nice to have something cheesy on Thanksgiving! Pairs with cranberry sauce well.
