Bubba's Gumbo Recipe

1/2 chicken
1/2 bell pepper
1 medium onion
2 sticks butter
1 lb. lean sausage
4 tbsp. flour
5 cloves garlic
1 tsp. gumbo file'
1 tbsp black pepper
1 tsp. salt
1 can tomatoes with chopped green chilies
1/2 lb. okra
1 stalk celery
1 bayleaf

Cover chicken with water and boil until done.
Take the chicken out of water, debone, and shred meat.
Add half bell pepper, diced.
Dice onion, celery and bay leaf.
Dice 1 lb. lean sausage. Put aside.
Melt butter in skillet and add flour.
Stir often until dark brown. Be careful to not burn it.
When roux turns brown, pour into the pot of veggies.
Add 1/2 lb. sliced okra, 1 tsp gumbo file', chopped garlic cloves, black pepper, salt, can of tomatoes (optional).
Cook on medium low for 1 hour.
