'Ulu/Breadfruit Bread Recipe

Ingredients: 3 sticks butter, softened 2-1/2 c. sugar 6 eggs 2 tsp. vanilla extract 4 c. sifted flour 1 tsp. salt 4 tsp. baking soda 3 tsp. cinnamon 4 c. really ripe, soft 'ulu/breadfruit 1 c. chopped walnuts, or the nut of your choice (optional)

Directions:Preheat oven to 350º
Cream together butter and sugar. Beat until fluffy.
Add sugar one at a time, and combine with butter and sugar between each addition.
Add the vanilla.
Sift the dry ingredients together and add to the egg/butter/sugar mixture alternating with the 'ulu/breadfruit "custard."
Add the nuts.
Pour batter into 4 large, greased and floured loaf pans.
Bake for about 1 hour or until the center of the loaf is set. |

Notes: You don't need to cook the 'ulu/breadfruit before using. This is a great recipe when the 'ulu gets too ripe and is really, really soft. One of my friends calls this 'ulu "custard." You can cut the 'ulu in half and scoop out the soft flesh avoiding the seeds/core and skin.
You could use your favorite banana or mango bread recipe and simply substitute the really ripe, soft 'ulu/breadfruit for the banana or mango.
