2 Tbsp. Smoked Paprika
2 Tbsp. Kosher Salt
2 tsp. Garlic Powder
2 tsp. Italian Seasoning
2 Tbsp. EVOO, divided (See Note below)
1/2 tsp. Chili Powder (Optional)
1 tsp. Black Pepper

4 Chicken Leg Quarters, skin-on, bone-in, and warmed to room temperature
10 Small Red Potatoes, quartered
3 Carrots, diced on the diagonal
3 ribs Celery, diced on the diagonal
3/4 c. Green Onions, diced on the diagonal, greens as well

Prepare vegetables, and pre-heat oven to 400 degrees.

For Rub, combine ingredients in small bowl, saving about 1/3 of the EVOO for vegetables (See note below).

Pat chicken dry with paper toweling, then apply 1/2 to 2/3 of the rub over leg quarters, including inside of thigh's skin if not using a Dry Rub. Place in parchment paper lined baking sheet with sides. Cook about 40 minutes total.

Meanwhile, place vegetables in bowl and pour remaining rub over them stirring to coat all evenly. Set aside.

Remove chicken from oven after 20 minutes cooking time. Scatter vegetables evenly about the sheet and return chicken to oven cooking for remaining 20 minutes or until chicken is 165 degrees at thickest parts.

Try using a Dry Rub and merely sprinkling it over the chicken by not mixing the EVOO the spices.
