1 jar marinated artichokes (drained)
1 c. Hellman's® light mayo (can use full fat too, but it has to be Hellman's)
2 tbsp. onion
1 c. Parmesan

½ c. Mozzarella (optional)

Paprika (sprinkle on top)


Additional:
Garlic toast rounds or a toasted crusty french bread loaf for serving

Preheat oven to 350º

Put top 4 ingredients together in food processor bowl and blend. Add mozzarella if you have it. Spread mixture into a small baking dish coated with Pam®. Sprinkle with paprika.

Bake for 30 minutes, and serve with bread and/or toast.

This is so amazing (my friends are giddy when they see it on the table). Obviously it is not great for you, so I changed to light mayo to help the cause (honestly...you barely notice).

We are not fans of chunky artichokes, but you certainly could skip the food processor and just grate the onion.
