Ingredients:  
1 cup packed brown sugar
½ cup chopped pecans
¼ cup chilled butter, cut into ¼” pieces

5 lbs yams, peeled & cut into 1½” pieces

4 large eggs
3 T maple syrup
2 T vanilla
1 T lemon juice
2 tsp salt

Directions:
Directions:
Mix sugar, pecans& butter in small bowl. Cover & chill
Spray 9x13 glass dish
Cook potatoes in pot of boiling water till very tender. Drain. Let stand 15 min. Mash
Beat eggs, syrup, vanilla, lemon juice & salt.
Mix in potatoes
Transfer to baking dish
Sprinkle pecan mixture over top
Bake 350º. 1 hour
Let stand 15 minutes.
