2 Delicata Squash

Crushed Ginger

Directions:

Cut your 2 ends off the squash, then cut it down the middle (like a hot dog bun)

Take out the seeds that are there.
Slice about 3/4 of an inch pieces (they look like “smiles”).
Finally, slice the “smiles” in 4 pieces.

Heat your pan.
Add some crushed ginger (a few teaspoons) in with the Delicata and add all to the heated pan.

Make sure you have some veggie broth handy so the squash doesn’t stick to the pan and burn...
Move the Delicata around the pan till tender .
Usually less than 10 minutes - depending on the size of the pieces.

Season with S&P, maybe cayenne, and whatever spices you are wanting to try :-)

When I have leftover broccoli or cauliflower, I love to heat that and throw in with the Delicata as well! So yum!!

Delicata Squash is one of my personal favorite veggies! The beauty of this sweet, mild squash is that you eat the skin - definitely a reason to buy organic!!
