Ingredients: 3 tablespoons olive oil 2 eggs 1 fresh pineapple 1 cup fresh veggie mix (e.g., green bean, corn, carrot, pea, onion) 1 ½ cups seafood mix (e.g., shrimp, octopus, mussels) 1/2 cup chopped green onions 2 cups cooked and chilled white jasmine rice 1 tablespoon soy sauce 1 small lime ¼ teaspoon black pepper Salt, to taste

Directions:1. Cut pineapple in half, lengthwise. Scoop chunks out with a spoon and cut them into smaller chunks. 2. Place the pineapple bowls in oven and bake them for 10 minutes (250F). 3. Heat a large skillet over high heat and add 1 tbsp olive oil. Scramble the beaten eggs to cook evenly. Remove egg from the skillet and set aside. 4. Heat now-empty-skillet over high heat, add 1 tbsp olive oil and seafood mix. Cook them for about 2-3 minutes and set aside. 5. Heat now-empty-skillet over high heat, add 1 tbsp olive oil, veggie mix, and fresh pineapple. Stir fry for 2 minutes. 6. Add rice, fried eggs, fried seafood mix, salt, soy sauce, and black pepper. Stir fry everything together for 1 minute. 7. Add green onion and stir fry for 30 seconds. Squeeze lime juice on pineapple fired rice. 8. Transfer pineapple fried rice into pineapple bowl and garnish with chopped green onions. |
