3 large sweet potatoes, baked and mashed
3/4 cup sugar
1 stick of butter
2 eggs, beaten
1 tsp. Vanilla extract
1 sm. Can Pet™ evaporated milk

Topping
1 cup firmly packed brown sugar
1/2 cup flour
1/2 cup chopped pecans
1/2 stick softened butter

Directions:
Directions:
Mix sweet potatoes with sugar, butter, eggs vanilla and evaporated milk. Soup into 2 quart soufflé dish sprayed with cooking spray. Combine brown sugar, flour, pecans and softened butter and blend well using pastry knife. Sprinkle topping over sweet potatoes. Bake at 325º for 25-30 minutes.
