1 T vegetable oil
2 carrots, sliced
1 onion, chopped
1 stalk celery, sliced
2 cloves garlic, minced
1 T fresh basil, chopped
1/4 tsp salt
1/4 tsp pepper
3 cups chicken or vegetable stock
1 28 oz can tomatoes, chopped
8-9 oz cheese tortellini
1 cup canned garbanzo beans, drained and rinsed
1 yellow squash, chopped
1 zucchini, chopped

Directions:
Directions:
In a large saucepan, heat oil over medium heat.
Cook carrots, onions, celery, garlic, basil, salt and pepper for 5 minutes.
Add stock and tomatoes and bring to a boil.
Reduce heat and simmer for 10 minutes.
Add tortellini, garbanzo beans, squash and zucchini.
Simmer until tortellini are tender but firm (about 10 minutes).
