Brie Potatoes Recipe

2 lbs of baking potatoes or 2 pkgs. of Ore Ida™ Steam and Mash potatoes
1 clove minced garlic
1/2 cup chopped green onion
2 tbsp. Butter
4 oz. Philadelphia Brand™ cream cheese, cubed
1/2 cup half and half
3/4 tsp. Salt
1/4 tsp. Pepper
8 oz. cold Brie cheese, rind removed and cubed

Bake potatoes at 450º for 1 hour. When potatoes are finished baking, scoop out (save potatoes shells if making twice baked Brie stuffed) and place in a large mixing bowl. Keep warm. Sauté garlic and onions in butter until soften. Mash potatoes, add garlic and onions, cream cheese, half and half and salt and pepper, mix well. Fold in the Brie. If you are making twice baked stuffed, spoon mixture back into individual potatoes and top with parsley. If making mashed potatoes, spread mixture in a 8 x 8 casserole and sprinkle with the parsley. Return to a warm oven until ready to serve.
