Grandma Arnone's Boscotti Recipe

5 heaping cups sifted cake flour (need 2 boxes Soft Silk Flour, but you won't use it all)
¼ tsp salt
4 tsp baking powder
2 cups sugar
6 large eggs
¾ cube butter (melted)
¼ tsp anise oil

Directions:
Directions:
Preheat oven to 425ºF
Blend flour, salt, and baking powder. Add sugar (make a well)
Add 5 eggs, for the last egg only add the yolk. Whip the egg white with a fork and set aside
Add melted butter and anise oil to the mixture. Blend thoroughly (like a stiff dough but does not stick to hands)
Divide dough into 5 loaves. Make loaves very tall, as they flatten while they are baking.
Brush loaves with the beaten egg white
Bake for 15 minutes
Remove from oven and slice on the diagonal.
Turn broiler to high
Place cut sides up on the baking sheet and place on bottom rack of the broiler until brown, turn and do the same on the other side

This recipe has become a staple for much of the Atkin family, but originally came from Uncle Rick's Italian Grandma. My parents made these with Uncle Rick, Aunt Carol and Rick's Mom for years! Must be served with her wonderful rice pudding! There have been very few holidays where we have not made these delicious biscotti! They are also wonderful dipped in coffee.
