1 Cup Shortening
1 Cup Brown Sugar
1 Cup Sugar
2 Large Eggs
1 Teaspoon Vanilla
1 1/2 Cups Flour
1 Teaspoon Salt
1 Teaspoon Baking Soda
1 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
1 1/2 Cups Oats
1 1/2 Cups Coconut
1/2 Cup Macadamia Nut

Cream shortening and sugars. Add eggs and vanilla and mix well.Sift together the flour, salt, soda, cinnamon, and nutmeg. Fold into the creamed mixture. Blend in oats, coconut, and nuts. Drop by spoonful onto a greased baking sheet. Bake at 350F for 8 to 10 minutes. Add macadamia nuts and white chocolate chips for a real treat.
