1/2 cup butter 2 white onions halved and sliced 1 red onion halved and sliced 5 shallots sliced 1/2 bunch thyme sprigs 6 cups chicken stock 2 cups veal or beef froth salt/ pepper French bread sliced and toasted 1/2 cup Gruyere cheese 4 green onions sliced 1/4 cup chopped chives

Melt butter in a pot add onions and shallots cook for 30 min stirring. Take thyme bundle ad to onion mix Add chicken stock beef stock bring to a boil reduce and simmer 20 min uncovered. Remove thyme bundle adds salt/pepper. Ladle into bowls top with bread and cheese Broil on a baking sheet 2min to melt and brown cheese Sprinkle green onions and chive over
