Ricotta Cookies Recipe

lb butter
1 C white sugar
2 eggs
15 oz ricotta cheese
2 tbsp vanilla
4 C all-purpose flour
1 tsp baking powder
1 tsp baking soda

5 tbsp milk
1 C confectioners sugar
1 tsp almond extract
C colored sprinkles or shaved chocolates for sprinkling on cookies

Preheat to 350 degrees

Cream butter and sugar, beat in eggs, add ricotta cheese and vanilla. In separate bowl combine flour, baking powder and baking soda. Blend into wet ingredients, add extra flour if need to make a workable dough.

Roll dough into tsp sized balls and arrange on ungreased cookie sheet lined with parchment paper.
Bake 8-10 minutes lightly browned.

Combine milk, confectioners sugar and almond extract until very smooth, spoon over warm cookies and sprinkle to decorate.
