Compote:
8 stalks rhubarb cut into 1/2" pieces
3 apples, peeled, cored and diced
1/2 c white sugar
1/4 c water

Cake
2/3 c white sugar
1/4 c margarine
1 egg
1 tsp vanilla
3/4 c milk
1-1/2 c flour
2 tsp baking powder
1/4 tsp salt

Crumb topping
1-1/2 rolled oats
1/2 c margarine (softened)
1/2 c white sugar
1 tsp ground cinnamon

Directions:
Directions:
Combine all compote ingredients in a med sized pan, bring to a boil, reduce heat and cook for about 10 minutes until thickened.

Make the cake by mixing the dry ingredients in one bowl, the wet in another and mixing them both together.

In another bowl, mix together the crumb topping and set aside.

Put the batter in an 8" square baking dish. Next add the compote and then sprinkle the topping on.

Bake at 350º until a toothpick inserted into the center comes out clean. About 40 minutes.
