Ingredients:  
Ingredients:  
2 T unsalted butter
1 small onion, chopped
2 cloves garlic, minced
3 cups heavy cream
1 cup milk
4 sprigs fresh thyme
2 bay leaves
2 tsp salt
tsp pepper
4 lbs russet potatoes, peeled & cut into ⅛ slices
4 oz. cheddar cheese

Directions:
Directions:
Heat oven to 350. Use middle rack
Melt butter in Dutch oven over medium heat
Cook onion to brown, about 4 minutes
Add garlic. Cook about 30 seconds.
Add cream, bay leaves, salt & pepper & potatoes
Simmer & cover till potatoes almost done, about 15 minutes
Transfer potatoes to gratin dish
Sprinkle with cheddar
Bake till bubbly around edges& golden brown. 20 minutes.
