leftover turkey meat, bite size pieces
carrots

noodles - egg or spirals, whichever you prefer

Like many of our "authors," Don does not have measurements. He goes by what it looks like, what it taste like, how much turkey he has left over after Thanksgiving. But this is a GREAT way to use that leftover turkey from Thanksgiving Day.

Don boils the turkey carcass and makes a strong broth. He cuts his onion and celery
and throws it in too. Sometimes he throws in carrots, sometimes he doesn't. If they soup tastes a little salty, he will throw in the carrots to help absorb the salt. After simmering for several hours, Don throws in his noodles. When noodles are almost done, he adds in his turkey meat. He always puts the meat in last so that it remains soft and does not over cook.
