Ingredients: 4 Zucchini - ½ pound each 4 tablespoon butter 1 cup Onion, finely chopped 2 teaspoon Garlic, finely minced 1 cup + 2 tablespoons crushed Ritz crackers 4 tablespoon Parmesan and/or cheddar, freshly grated 2 Eggs, well beaten 3 tablespoon Olive oil - extra virgin is best

Directions:Preheat oven to 450°F. 1. Trim off the ends of each zucchini. Cut each in half crosswise. Cut each piece in half lengthwise and steam until tender. Leaving the shell at least ¼ inch thick, scoop out center of zucchini and place in heavy skillet. There should be about 1½ cups. 2. Add butter, onions and garlic to heavy skillet and cook briefly, stirring. Cook about 3 minutes until the excess moisture evaporates. 3. Spoon and scrape the mixture into a mixing bowl and let cool slightly. Add 1 cup Ritz crackers and cheese and blend thoroughly. Stir in the eggs. 4. With 1 tablespoon of the oil, brush the inside of a baking dish big enough to hold the shells in one layer. Spoon an equal portion of the filling into each shell and smooth over the top. 5. Blend the remaining 2 tablespoon Ritz cracker crumbs with the remaining 2 tablespoon of cheese and sprinkle over the top of the stuffed zucchini boats. Sprinkle evenly with the remaining 2 tablespoon of oil. Place the dish in the oven and bake 25 minutes. Serve immediately. (Note: Cut the finished zucchini in half to serve more people.) |
