Ingredients: Chicken: Chicken Thighs OR breast, Skinless and boneless, 1 lbs diced 2 eggs whisked 1/2 cup protein powder 1/2 tsp salt 1/2 tsp pepper ¼ tsp ground ginger
Orange Chicken Sauce: 3/4 cup sweetener **PLEASE NOTE: If you are using monkfruit, erythritol, or confectioners, HALF the sweetener first, taste it and then adjust to your liking** 4 tbsp white vinegar 3 tbsp soy sauce ¼ - 1/2 tsp sesame oil (if you love sesame oil, use 1/2!) ¼ cup water ¼ tsp ground ginger ½ tsp garlic or 2 garlic cloves 1/4 tsp red pepper flakes 1 tsp orange zest 1/4 tsp xanthan gum
For frying: 1/2 cup olive oil (we are shallow frying so we will NOT be using all of this)

Directions:Mix the protein powder and spices in a bowl. Whisk eggs in separate bowl. Dredge chicken and set aside to cook later.
Then, make the orange sauce. Get clean bowl, add water, white distilled vinegar, soy sauce, ground ginger, ground garlic, pepper flakes, grated orange rind, sweetener, sesame oil. Whisk ingredients.
Heat pan with 1/4 c olive oil. Slowly add the pieces of chicken, cook till brown, flipping to other side. (about 3 minutes each side). May want to add more oil to make orange sauce. Add the orange mixture. Simmer, add xanthum gum to thicken. Cook until thickened. Then add the chicken pieces and coat turning constantly. Continue to cook till the orange sauce is almost cooked in to the chicken pieces.
Top with cut up green onion pieces. Serve with cauliflower rice. |
