Ingredients: Brownies: 3 large eggs at room temperature ½ cup + 1 tablespoon (130g) melted salted butter 1 teaspoon (5mL) vanilla extract ¾ cup (150g) granulated erythritol ¾ cup (75g) blanched almond flour ¼ cup + 2 tablespoons (40g) unsweetened cocoa powder (I used Dutch processed cocoa powder) 1 teaspoon (4g) baking powder 1 ½ tablespoons (23mL) cold coffee or water
Frosting: 1 cup (240mL) heavy whipping cream 4 large egg yolks ¾ cup (150g) powdered erythritol ¼ cup (60g) salted butter 1 teaspoon (5mL) vanilla extract 1 cup (100g) unsweetened shredded coconut 1 cup (110g) chopped toasted pecans

Directions:Pan size: 8 x 8 inch (20 x 20 cm) square pan
Bake at 350°F (180°C) for 20-25 minutes or until toothpick is clean when inserted.
Brownies: Mix dry ingredients.
In a separate bowl, mix the wet ingredients and stir.
Bake and let cool. Once cooled, make frosting and top the brownies. Garnish with a pecan. |
