1 pound cucumbers
1 pound carrots
1 large head of cauliflower
1 pound of small white onion, peeled
1 to 1½ pounds green tomatoes
boiling water
2 cloves garlic peeled whole
2 T. dill weed
1 quart of white vinegar
4 cups white sugar
½ cup pickling salt

Directions:
Directions:
1. Cut cucumbers into ¼ to ½ inch slices, set aside.
2. Cut carrots into 1 inch chunks, set aside.
3. Trim cauliflower and separate into flowerets.
4. Quarter the onions if they are larger than 1 inch in diameter.
5. Cut green tomatoes into quarters.
6. Drop carrots, cauliflower and onions into boiling water for 2 minutes. In several batches if necessary.
7. Layer all the vegetables in a gal jar placing garlic and dill weed in the center of the jar.
8. Mix together vinegar, sugar and salt until blended, pour over vegetables.
9. Cover and refrigerate for 24 hours.

Tips:
You may add more veg to the jar so they are used. If desired, divide the entire amount into quart jars for additional brine to cover the veg. Use 1 cup vinegar to 1 cup sugar and mix 1 T. of salt.
