2 large zucchinis
2 large eggs
2 cups shredded cheddar cheese
1/4 teaspoon baking powder
1/4 teaspoon salt

Directions:
Directions:
1.Preheat oven to 45oš.
2.Shred Zucchini and place in dish towel. Squeeze out as much moisture as possible. When you think you have gotten as much out unroll and let set. Then wrap it back up and do it again. Do not skip this step.
3.Place zucchini and all other ingredients into a mixing bowl. Then mix.
4. 1/2 cup measuring cup will make a large tortilla. Place on a silicone baking sheet and pat to a very thin circle.
5. Bake 15 minutes. Carefully flip tortillas.
6. Bake 3-5 minutes until set or lightly brown.
