Ingredients: 1 box chocolate chip cake mix, prepared according to directions (or 1 box vanilla cake with chocolate grated into it) 1 cup coconut 1 container Cool Whip 1 can creamy chocolate frosting, or your favorite chocolate frosting recipe

Directions:Make the cake according to directions and bake in two round cake pans. If you want to go to the trouble (and I would) bake the cakes in 8" rounds, then split the layers in two so you've got 4 layers after you cool and remove the cakes from the pans.
Mix the Cool Whip and coconut and spread between layers, reserving about ½ cup to put on the top of the cake.
Frost the cake, and spread the remaining Cool Whip mixture on top of the cake. Refrigerate until ready to serve. |

Notes: Betty was one of our neighbors when I was growing up and she made this for one of my birthdays. It's so simple, but so good. The last time my childhood best friend came to visit, she asked about that cake. So, it's stuck in our minds for over 40 years, and we've eaten a lot of cake along the way--this really is delicious!
