two eight oz. Halibut fillets
1/8 c. horseradish
2 eggs
1/2 c. buttermilk
1/2 c. breadcrumbs
pinch of freshly chopped parsley
pinch of salt and pepper
1 c. flour
1 T. butter

Directions:
Directions:
Mix the horseradish with the breadcrumbs and parsley and set aside. Slightly beat eggs, add buttermilk and set aside. Mix flour, salt and pepper together. Lightly flour halibut with the flour mixture, then place halibut into buttermilk mixture, then bread halibut with horseradish mixture. Heat a frying pan over medium heat. Add butter to melt but do not let the butter brown. Place the fish fillets in pan until golden brown on both sides. Serve with garlic mashed potatoes.
