1 package baby back ribs
Dry Rub:
3 T paprika
1 T each, garlic, onion powder and salt
2 tsp each pepper and mustard powder
1 tsp chili powder
1/4 tsp cayenne powder
Mop:
1 T each paprika and yellow mustard
1 tsp each garlic & onion powders and cumin
2 tsp pepper
1 tsp salt
1/2 C each catsup and apple cider vinegar

Combine dry Ingredients, set aside
Strip fine membrane from bone-side of meat, if any. I use a paper towel to grab ahold, it's slippery.
Coat and rub the meat with the dry rub.
Place in smoker, on smoke only, for at least two hours.
Combine your mop ingredients
After smoking for several hours, mop your ribs on both sides every 30 minutes until meat reaches 160º
Wrap meat tightly in foil. (If you want moist ribs, add apple juice now)
Turn up smoker to 300º and cook meat to 175º About 1 hour

This recipe is just a starting point. You might try different seasonings like maple bourbon, add Sweet Baby Ray's at the end...make them your own.
