3 slices bacon coarse chopped and fried crisp
1/2 cup chopped onion
1 clove garlic minced
Salt and pepper to taste
1 1/2 cup chicken broth
1/2 medium head cauliflower cut into florets
1/3 cup sour cream
3/4 cup shredded Jack o Cheddar cheese divided
1 green onion chopped

Directions:
Directions:
Put onion, garlic, chicken broth, cauliflower, salt and pepper in blender and let her rip on Soup 2 (smooth). Pause with about 15 seconds to go and add sour cream and 1/2 of the cheese. When finished, adjust seasonings. Serve topped with bacon, cheese and green onions.

It’s ok if ingredients fill the blender above the soup line. It will come down as it cooks. Soup doesn’t look like it’s cooking on top in the beginning, but it is steaming the stuff on top, so don’t worry.
