2 lbs Italian sausage, browned
3 + carrots chopped
1 onion chopped
4 cloves garlic chopped
2 cans cannelloni beans
3 quarts chicken broth
2 cans 14.5 oz. diced tomatoes
1 T basil
2 cups large shell pasta
4 quarts spinach leaves
Salt & pepper
Directions:
Directions:
Brown sausage. Discard all but 1 T oil.
Add carrots, onion & garlic
Stir in broth, tomatoes, beans & basil
Bring to boil
Add pasta reduce heat
Simmer. Skim fat
Stir in spinach till wilted
Serve with parmesan
