2 ¼ c sugar
¾ c water
1/3 c dark corn syrup
1 ¼ T cinnamon
1 T ginger
1 c + 2 T butter
1 T baking soda
1 T water
8 c all-purpose flour

Directions:
Directions:
Combine first 5 ingredients in a medium saucepan. Cook over medium heat, stirring until sugar dissolves. Add butter, stirring until melted. Dissolve baking soda in 1 T water; add to sugar mixture. Pour sugar mixture into bowl. Gradually add flour, mixing well. Chill 1 hour.

Divide dough into thirds. Roll one-third dough to ¼“ thickness on a lightly floured surface. Cut with gingerbread man cookie cutter and place onto lightly greased cookie sheet.

Bake at 350 deg F for 8 to 10 minutes. Cool 1 minute on cookie sheet and remove cookies to wire racks to cool completely. Repeat procedure with remaining dough.

When cool, paint with cookie glaze.

1 egg white
1 ½ c powdered sugar, sifted
1 T melted butter
½ t vanilla
1/8 t salt
Food coloring

Combine egg white and sugar in a small mixing bowl. Beat at medium speed until blended. Add the butter, vanilla and salt and beat until smooth and creamy. Divide the glaze into muffin tins and tint with food coloring as desired. Cover the unused glaze with a damp paper towel while working. Spread the glaze with a small artist’s paintbrush or thin it with warm water to drizzle on with toothpicks. Be creative and enjoy the calorie-free cookies (Mona’s joke)!!!

I got this recipe from one of my favorite client’s in Slidell LA when I worked for Merial Ltd selling animal pharmaceuticals. These cookies are AWESOME! Baked them with Momma for Christmas 2010! Boiled first 5 ingredients on accident – removed from heat immediately. Do NOT chill for more than 1 hour – it is a very firm dough. Would add 1 ½ T of ginger next time.
