1 lb butter softened
1 cup icing sugar
1 tablespoon vanilla
3 cups flour
½ cup cornstarch
have a half cup of flour on hand when mixing

Directions:

Combine butter, icing sugar and vanilla. Knead until smooth, no lumps. In a separate bowl mix flour and corn starch together. Add the flour mixture to the butter mixture. Knead well until dough is smooth and comes off your hands. If dough is a bit sticky, add a bit of the reserved flour.

Preheat oven to 350F. Using teaspoon, scoop dough and roll into a ball. Place on cookie sheet. I used parchment paper. Flatten ball with a fork.

Bake 20 minutes until edges are slightly brown. my oven took 30 minutes.

I used my stand mixer instead of doing it by hand which would have caused gramma enormous stress. Worked great though and I didn't have to put my hands in it.
