2 lbs skinless, boneless chicken thighs or breasts
1 tsp Penzey's Revolution Spice (or any herbs you would use on chicken)
1-2 tbsp flour
1 med onion
2 cloves garlic
handful of string beans
8 tomatillos
1/2 box small tomatoes or 1 lg tomato cut into pieces

4 slices of mozzarella cheese or 3/4 c shredded

Directions:
Directions:
Shake cut up chicken in a mix of flour and herbs. Heat oil in fry pan and brown the chicken. Set aside.
Sauté the remaining vegetables until soft and add the chicken back into the fry pan.
Lay the pieces of cheese over the dish, cover it until the cheese melts.

Serve.
