Chicken with Spinach and Wine Recipe

Ingredients: 2 lbs Boneless, skinless chicken thighs or breasts cut in 1" pieces 1-1/2 c white wine 5 tbsp butter, cut into 1 tbsp slices 1/4 c avocado or olive oil Fresh basil, chopped 2 cloves of garlic, minced Salt and pepper to taste 1 red pepper 1 yellow or orange pepper 1 pkg fresh spinach

Directions:Cut the peppers in half, clean them and oil them. Roast in the oven at 400º until they brown a bit. Cool and then remove the skin from them. Slice them and set aside.
Heat the avocado oil in a large fry pan until hot, add the chicken pieces and brown them. Remove and set aside once browned.
Next, sauté the garlic and basil in the dripping that are left in the pan, about 1 minute. Add the chicken back to the fry pan and pour in the wine. (this is an estimate of amount of wine), let it cook down a bit. Remove from the burner and add the butter stirring it so it will melt. Add the roasted red peppers, salt and pepper.
Serve over fresh spinach. |

Notes: I made this recipe up based loosely on a dish I had at Scarlet Begonia's in Brunswick. You could add a bit of chicken broth to the mix along with the wine. You can also serve it over pasta instead of spinach.
You may find after trying this that the amounts should be altered. Use your imagination.
